A recipe for brocc-choi

A vegan lentil stew, feeds two. Goes well with rice. Preparation time 20 minutes.

  • Begin by finely mincing 1 fresh broccoli.
  • Fry the broccoli in olive oil. After a few minutes, add 2 cloves of pressed garlic.
  • Cook up 3dl red lentils until mushy.
  • Add 1dl soy sauce and 3dl cold water into a bowl. Add sriracha or chili to taste.
  • Add 0.5dl cornstarch to the bowl, and stir until the clumps have dissolved.
  • Mix the contents of the bowl into the frying pan and let simmer until it thickens.
  • Add the cooked lentils and stir.
  • Serve in a bell pepper with bok-choi spoon. Presentation is key!
